Carrot Cake

Method

1) Preheat oven to 350 degrees.
2) Bring 1 1/2 cups water to boil. Add carrots, sugar, water, and butter and simmer over medium heat, uncovered, for 5 minutes. Remove from heat and let cool.
3) Stir together flours, baking soda, salt, cloves, allspice, nutmeg, and cinnamon. Stir flour mixture into cooled carrot mixture until flour is moist. Do not over mix. Stir in vanilla and walnuts.
4) Pour into greased and floured cake pans. Bake in a 350 degree oven for 35 minutes or until a knife, inserted in the center, comes out clean. Cool for 10 minutes.
5) Frost with cream cheese frosting when the cake is completely cooled or serve the cake by itself warm or room temperature.
