Roast Turkey

Ingredients

20 pounds Whole Turkey
2 teaspoon Salt
2 teaspoon Pepper, freshly ground
4 tablespoon Butter, room temperature
3 stick Unsalted Butter, melted
25 ounces Bottle of Wine, red or white
1 Cheese cloth
1 Cooking string

Method

1) Rinse and dry the turkey and let set until room temperature.
2) Preheat oven to 450°
3) Place the turkey, breast side up in a large roasting pan with a roasting rack set inside of it.
4) Sprinkle salt and pepper inside the cavity of the turkey and, if desired, stuff the turkey with prepared turkey stuffing.
5) Tie the legs together with cooking string. Fold neck under, using toothpicks to secure if necessary.
6) Rub turkey with softened butter and sprinkle with salt and pepper.
7) Combine the melted butter and wine. Add the cheese cloth. With the cheesecloth dripping wet, drape it over the turkey, covering the turkey and wings as completely as possible.
8) Place the turkey in the 450° oven and bake for 30 minutes.
9) After 30 minutes, reduce the oven temperature to 350° and baste the turkey with the wine and butter mixture.
10) Cook for another 2 ½ hours, basting with wine and butter mixture and turkey juices every 30 minutes and then carefully remove the cheesecloth, being careful not to pull the turkey skin with it. Baste with wine & oil and turkey juices.
11) Cook for another hour, basting after 30 minutes.
12) Remove the turkey from the oven and insert an instant-read thermometer into the thickest part of the turkey, being careful not to touch the bone. When the temperature reaches 185°F and the legs are falling off the turkey, remove the turkey from the oven.
13) Let the turkey stand for 20-30 minutes before carving so that the juices can absorb into the turkey.

Notes

If you do not stuff the turkey with turkey stuffing, then reduce the cooking time by about 30 minutes.
