Sweet Potato Casserole

Method

1) Preheat oven to 350℉.
2) Boil sweet potatoes until soft when pricked with a fork, about 20 minutes. Drain thoroughly and mash.
3) Melt ½ stick of the butter and add sugar, vanilla, eggs, milk. Mix into mashed sweet potatoes.
4) Pour sweet potato mixture into a baking dish and set aside.
5) For the topping: In a separate bowl, melt 1½ sticks of butter and mix with brown sugar.
6) Stir in flour and pecans
7) Pour pecan mixture over the sweet potatoes and spread evenly
8) Bake at 350° for 30 minutes until potatoes are not jiggling in the baking pan. It will set completely as it cools.
